Cooking in Swahili

This week, I challenged Kevin to test his Swahili skills by making a classic Kenyan dish known as githeri. Here is the recipe I gave him in case you want to try it yourself.

Viungo

  • 1 Kijiko ya mafuta
  • 1 Kitunguu
  • 2 Kitunguu saumu vipande
  • ½ Kijiko ya chai ya kari poda
  • 1 Kijiko ya chai ya paprika
  • ¼ Kijiko ya chai ya pilipili manga nyeusi
  • ¼ Kijiko ya chai ya pilipili mbuzi
  • 1 Kikombe ya maharangwe
  • 1 Kikombe ya mahindi
  • 2 Nyanya 
  • ¼ Kijiko ya chai chumvi 
  • 1 Pilipili hoho 
  • ¼ Kikombe wa maji
  • Dhania ama giligilani
  • 1 Parachichi

Jinsi Ya Kupika

  1. Kata kata vitunguu, nyanya, saumu, dhania na pilipili hoho.
  2. Chukua sufuria, weka jikoni, tumia moto mdogo, kisha, weka mafuta, baada ya dakika nusu, weka vitunguu, nyanya na pilipili hoho.
  3. Baada ya dakika tatu, weka maharagwe na mahindi.
  4. Weka viungo (spices).
  5. Ongeza maji, kisha, pika (karanga) kwa dakika kumi.
  6. Kata parachichi.
  7. Zima jiko, pakua chakula na parachichi.

English Version

Ingredients

  • 1 tbsp oil 
  • 1 medium onion, chopped
  • 2 cloves of garlic, chopped
  • ½ tsp curry powder 
  • 1 tsp (smoked) paprika 
  • ¼ tsp dried chili, ground
  • ¼ tsp black pepper, ground
  • 1 can red kidney beans, drained and rinsed
  • 1 cup corn/maize
  • 2 tomatoes, chopped 
  • 1 green pepper, chopped
  • ¼ cup of water
  • Salt to taste
  • Coriander or parsley
  • 1 avocado

Instructions

  1. Heat the oil in a pot over medium heat.
  2. Cook the onion in the oil until it is soft, then add the garlic and stir for 30 seconds.
  3. Pour in the curry powder and paprika, while stirring for another minute to prevent burning.
  4. Pour the beans, corn and tomatoes into the pot.
  5. Add 1 cup of water.
  6. Add salt, cover the pot and allow to cook for about 15 mins.
  7. Remove from heat and mix in the chopped coriander.
  8. Serve with sliced avocado.
